New Fisher Island Executive Chef
Updated: Sunday, March 14, 2010

Dear Members:

Please join me in welcoming Tom Parlo as our new Executive Chef at Fisher Island Club. Tom's 25 year career has taken him to some of the country's truly top hotels, including a trio of New York City's grand dames:  The Four Seasons Hotel, The St. Regis Hotel and the Ritz Carlton.  His training and experience has crisscrossed the globe, with stints in Europe and cities throughout the United States.

Chef Parlo comes to us from the Mandarin Oriental Miami where he was the Executive Chef for the last five years.  He oversaw the culinary operations for the hotel's four dining outlets - Azul, Café Sambal, M-Bar and Lobby Lounge, as well as all catering and banquet functions.

Chef Parlo has also appeared on local and national television programs including the TV Food Network and Travel Channel.  The James Beard Foundation named him one of the best "Hotel Chefs" in America. Together with his passion for quality and his dedication to using only the finest and freshest ingredients, Tom promises to bring creativity and consistency to all of your dining experiences at Fisher Island Club.

Best regards,

Larry Brown
